Sunday, April 17, 2022 Hi Wine Lovers :) The wine I tasted for this post was the 2019 Cabernet Sauvignon from Hopland, CA. This wine is about $12.00 per bottle. Wine magazine describes this wine as being well-balanced, full-bodied, wine showing a purity of black fruit flavors that are not disrupted by over-oaking. Recommended Pairings: grilled meats, baked brie with cranberries and spiced pecans, fennel sausage pasta. Aroma: red fruit, specifically cherry (wine folly textbook page 31) Secondary Aroma: earth, specifically mushroom (wine folly textbook page 31) Tertiary Aroma: general aging, specifically vanilla (wine folly textbook page 31) Flavors: blackberry, toasted hazelnut, and cinnamon Grape Varietal Characteristics: the world's most popular wine is a natural cross between cabernet franc and sauvignon blanc that originated in Bordeaux (wine folly textbook page 88) My Thoughts💭 I don't know who Josh is but he makes a pretty decent wine. It definitely wasn't one of my

The Cavit Collection website describes this wine as having light refreshing flavors of citrus and green apple. It was made using cold fermentation in thermo-conditioned tanks and is 12.1% alcohol.  Recommended Pairings: pasta in cream sauce, risotto, veil, chicken, and fresh seafood dishes. Aroma: citrus, specifically lemon and lime (wine folly textbook page 31) Secondary Aroma: earth/other, specifically butter (wine folly textbook page 31) Tertiary Aroma: general aging, specifically baking spices (wine folly textbook page 31) Flavors: this wine has low tannins and high acidity. Grape Varietal Characteristics: a pink grape mutation of pinot noir (wine folly textbook page 149) My Thoughts💭 This was not my favorite wine because of the high acidity, but I cooked with it and made a sauce with pasta and chicken! It tasted better when it was
